Summer Recipe: Chicken, Walnut, Cranberry and Mango Salad

A healthy and delicious quick meal for lunch or dinner, this light salad combines chicken breasts, walnuts, zesty dried cranberries and mango pieces with a little lemon and light mayo for a tasty and heart-healthy treat.  Can be served over greens with a little olive oil or even as a sandwich filler (try multigrain pita pockets!)

INGREDIENTS:

  • 3 cooked chicken breast fillets, diced (grilled or pan cooked in a few tablespoons of vegetable oil - Canola best)
  • 1 cup walnut pieces
  • 1 cup dried cranberries
  • 2 cups diced ripe mango pieces (2-3 mangoes, diced)
  • 2-3 tablespoons light Hellman's Mayo (or your favorite brand.  You can omit the mayo if you wish.)
  • 1 tablespoon fresh lemon juice (1-2 lemons)
  • Salt and pepper to taste

PREPARATION:

  • Mix all ingredients in a bowl and salt and pepper to taste.
